Weekly Menu January 31-February 6
This is HARD. Two weeks of no menu planning and very little cooking, and it’s incredibly difficult to get back in the habit of planning meals. And cooking them. It’s worse that I have to actually cook them. I’m going to be faced with a two week period of non-cooking again in the last week of February/first week of March when I do back to back trips again so I guess I’d better start getting used to this as travel season gets geared up. Also, doing a menu plan means I have to grocery shop. I haven’t had to do that in several weeks either. Yes, I have gotten spoiled!
Sunday: General Tso’s chicken (yep, Josh is cooking, easy for me!)
Monday: Beef stew w/herb bread
Tuesday: Grilled steak w/salad and bread (we are so crazy, grilling in the middle of winter!)
Wednesday: leftovers
Thursday: Mexican Lasagna
Friday: Spicy Basil Thai Chicken
Saturday: Pizza Casserole
Whew! That was…difficult. For some reason I had a terrible time thinking of anything to make this week. I forced my family to help plan this time.

We’re grilling steak tonight, and it’s -20 celcius out … which is like 9 degrees farenheit. So call us crazy too! LOL!
Sun: Lo Mein Pork
Mon: T-bones and mash
Tue: Chilli con carne
Wed: Veal/Sausage/meatballs/potatoes traditional ragout
Thu: Cheese lasagna
Fri: Meat pie
And the leftovers make some fine lunches throughout the week
…and I have to thank you for giving me the idea of planning the weeknight meals over the weekend (and thus doing the groceries accordingly); it’s been a life saver!
Next weekend starts Mardi Gras and I’m not sure how many people will be in town for the fun… Or how warm/cold it will be. Makes it a little tough to plan.
Sun: Baked Ham
Mon: chicken-spinach enchiladas
Tues: Chili & beans (I cook them separately, in their own pot. Then people can add beans to their preference.) with g/f cornbread
Weds: Ham curry
Thurs: leftovers
Fri: Boy Scout Eagle Banquet
Sat: Mediterranean beef ragout (I have zucchini to use)

Some day I’m going to come and stay with the people who leave their menus in the comments because they always look SO GOOD.
Sunday: Salad (Tuna or Egg) on toast
Monday: Cabbage Soup w/turkey meatballs & homemade bread
Tuesday: Pork Roast w/potatoes and carrots & crescent rolls
Wednesday: Left overs
Thursday: Beef Brisket (OMG I found one at the grocery! 1st time ever!) with cole slaw and baked beans.
Friday: Eating Out.
Saturday: BBQ & Stew
Angie, what’s a pizza casserole? It sounds easy and delicious, which are my basic criteria.
Mon: Soft Herbed Dinner Rolls, Chicken Pasta
Tues: Indian Nite: daal, rice, a veggie
Wed: Roasted Carrots & Apples, Roasted Sweet Potatoes, Pasta
Thurs: Brussel Sprouts (Broccoli for Wee), Olive & Walnut Stuffed Potato Bites
Fri: Pizza
Sat: Far Breton

here’s what we are having for supper:
tonight – ‘tokyo joe’-style veggie bowl with brown rice; edamame; cucumbers with sour cream dip; apples
monday – chirizo salad with jicama; cheddar corn bread; tangelos
tuesday – caramelized beef keilbasa (bangers); baked potato topped with blue cheesy steamed broccoli; banana pudding with bananas and nilla wafers; chocolate milk
wednesday – potato corn chowder with shrimp; crusty french bread; red plums
thursday – smoked gouda burgers on wheat buns; spagetti squash with salt and pepper, butter, and parmesan cheese; kiwi; raspberry lemonade
friday – leftovers
saturday – eat out at ‘namiko’s’ (sushi)
sunday – grilled cheese and spicy tomato soup; spinach salad with almonds, mandarin oranges, and crasins; grapefruit halves with sugar; homemade ice cream sandwiches
